Ice Cream Shaped, Ice Cream Sandwiches

Hi Everyone!
 
Today, I wanted to share a recipe for some super cute ice cream sandwiches I made... shaped like ice cream cones! Cleaver, I know lol.
 
This recipe is really easy, but overall does end up being time consuming and a little (a lot) messy. But sooo worth it too!

I recommend preparing the ice cream first (even the night prior). Ice cream is soooo so hard to cut into shapes... the creamier the ice cream the quicker it seemed to melt. To make it easier I pressed the ice cream I needed for a single 1" thick sandwich into small squares (trying to make it as level as possible). I wrapped each ice cream square in wax paper, folded it up and placed it individually in the freezer (small sections of ice cream freeze faster and make it easier to cut out). I made about 4 squares of each flavor using raspberry sorbet, mint and chip, butter pecan, and dark raspberry chip.

The next day I cut the ice cream into the ice cream cone shapes. I cut square pieces of wax paper to separate the shapes (one piece on the bottom and one on top, like a sandwich). Then I stacked them and placed the cut shapes back into the freezer (once cut they do begin to soften) . Leave the ice cream in the freezer until it is completely hardened.

After the ice cream is settled, everything else is smooth sailing. The cookies are super simple to make.

To make the cookies you will need:

        1 1/3 cups flour
        1/3 cup dark chocolate unsweetened cocoa powder
        1/2 cup & 2 tablespoons softened unsalted butter
        1/2 cup sugar
        3/8 teaspoons of salt
        2 small  egg yolks
        2 teaspoons vanilla extract





Sift flour and cocoa powder in a bowl, and mix. In another bowl, beat the softened butter, sugar, salt, egg yolks, and vanilla. Then slowly mix in dry ingredients into the wet ingredients until combined. Kneed dough together on counter and roll it into a ball.

Preheat your oven to 350° degrees and line cookie sheets with wax paper.

Roll out dough in between two pieces of wax paper. (This keeps dough from sticking to counter and rolling pin + eliminates incorporating extra flour into your dough that can make consistency crumbly). Roll dough out to 1/8 to 1/4 inch thick (depending on how thick you want your cookies). Then cut out dough to desired shape ( I used an ice cream cone cookie cutter, but you can cut them in rectangles, squares, circles or any other shape of your choosing, really ).

Set aside HALF of your cookies (these will the bottoms of the sandwich).....with the other HALF poke holes with a fork (these will be the tops of the sandwiches). Bake for 15-18 minutes until the cookies are firm... once the cookies are cooled they firm up even more (So depending on how chewy or crunchy you want your cookie, bake more or less time). After they have cooled, put the cookies in the freezer for a couple hours (you don't want warm cookies... the slightest warmth will start to melt the ice cream).

Once the cookies and ice cream cut outs are completely cooled and frozen, assemble the sandwiches. And enjoy!!!
